The Salad Wrap

Remember my After-School Snack post? I forgot to tell you guys what I made myself for lunch that day. Yes, I made my own lunch at 4:30pm, an hour after the kids got their snack.

As I was pulling the kids’ chips out of the oven, I snagged a few of the broken or cheese-less ones and set them aside for myself. (I actually had to hide them so Tommy wouldn’t see - he can be a real brat when it comes to his food sometimes.) Then I grabbed a tortilla, opened my fridge, and this is what came out:


What you’ll need:

1 8” whole wheat tortilla
1 cup romaine lettuce, chopped

¼ cup onion, chopped
1 small handful of cherry tomatoes, chopped

¼ cup cucumber, chopped

A few strips of fresh red pepper, chopped

2 tbsp of balsamic vinaigrette

2 spoonfuls of feta (or bleu) cheese
A small handful of stolen tortilla chips

The prep here is pretty simple, but this healthy salad-in-a-tortilla came out better than I thought! Maybe it was the fresh veggies, but I think the tortilla chips I borrowed from the kids’ snack are what took this salad to new heights.


Heat your tortilla in the microwave between a few damp paper towels. Spread your bed of lettuce and all your veggies in the center of your tortilla, saving the tortilla chips, feta, and balsamic for last. Then sprinkle your feta, drizzle your balsamic, and lay your tortilla chips on top, in that order. Now all you have to do is wrap it up! You’re done! What a healthy and tasty treat! Too bad I couldn’t get Kendall to eat half with me :-(
