Dessert Quesadilla

Are Valentine’s Day chocolates bearing you down?

Are you getting so many heart-shaped boxes of chocolates that you have to start throwing them out?

Sadly, these are not my problems (I would NEVER throw away chocolate), but if they’re yours, then, girl, have I got the recipe for you!

This recipe comes courtesy of Gabi Moskowitz, who was about to throw out her Lindt Chocolate Santa Claus when she remembered her brilliant recipe idea. I’ve taken the liberty of repurposing Gabi’s recipe for the steadily approaching V-Day and the never-ending boxes of truffles and chocolates that all you single ladies have the pleasure of getting.

Now without further ado, and with plenty of thanks to Gabi as well as all of the men in the world who buy their ladies chocolates, I bring you the decadent Dessert Quesadilla:

What you’ll need:

4 8-inch flour tortillas
4 oz. chocolate (truffles, chips, and Kisses work well)
4 oz. cream cheese
1 healthy pinch of cinammon
1 healthy pinch of salt
2 tbsp. unsalted butter, divided
2 tbsp. powdered sugar

What you do:

Spread each tortilla with an ounce of cream cheese. Sprinkle the chocolate pieces over half of the tortilla, on top of the cream cheese. Top with a dash each of salt and cinnamon and fold over to make a half-moon.

Heat 1/2 tablespoon of butter in a medium frying pan over medium heat and cook the quesadilla on both sides, until the chocolate is melted and the tortilla is golden-brown. Transfer to a plate or a warm (but not hot) oven until ready to serve. Continue cooking with remaining butter and quesadillas (using 1/2 tablespoon for each quesadilla).

Cut into wedges and serve warm, garnished with powdered sugar if desired. Serves 4.

Enjoy! - Lisa

Tortilla Mask Kid [PHOTO]

Courtesy of byteful.com comes this little gem (which was originally intended to be a computer wallpaper, believe it or not). When I googled "funny tortilla" and found this, my initial reaction was shock, which then turned to fear, which finally turned into delight. And that's why I'm sharing this with you all.

Here's what Eric and Gina said when I showed them "Tortilla Mask Kid."

Eric: "Oh. My. God. Where did you even find this?"

Gina: "That's so funny!"
Me: "Really? I thought you would hate it..."
Gina: "We need a print of this for the office!"
Me: "Really?"

Eric: "That's creepy."

The Salad Wrap

Remember my After-School Snack post? I forgot to tell you guys what I made myself for lunch that day. Yes, I made my own lunch at 4:30pm, an hour after the kids got their snack.

As I was pulling the kids’ chips out of the oven, I snagged a few of the broken or cheese-less ones and set them aside for myself. (I actually had to hide them so Tommy wouldn’t see - he can be a real brat when it comes to his food sometimes.) Then I grabbed a tortilla, opened my fridge, and this is what came out:

What you’ll need:

1 8” whole wheat tortilla
1 cup romaine lettuce, chopped

¼ cup onion, chopped
1 small handful of cherry tomatoes, chopped

¼ cup cucumber, chopped

A few strips of fresh red pepper, chopped

2 tbsp of balsamic vinaigrette

2 spoonfuls of feta (or bleu) cheese
A small handful of stolen tortilla chips

The prep here is pretty simple, but this healthy salad-in-a-tortilla came out better than I thought! Maybe it was the fresh veggies, but I think the tortilla chips I borrowed from the kids’ snack are what took this salad to new heights.

Heat your tortilla in the microwave between a few damp paper towels. Spread your bed of lettuce and all your veggies in the center of your tortilla, saving the tortilla chips, feta, and balsamic for last. Then sprinkle your feta, drizzle your balsamic, and lay your tortilla chips on top, in that order. Now all you have to do is wrap it up! See my how to roll a burrito post for instructions on how to properly roll any tortilla wrap, burrito, or salad – it’s all the same.

You’re done! What a healthy and tasty treat! Too bad I couldn’t get Kendall to eat half with me :-(

Until next time, Chef Mom (aka Lisa)
