Dessert Quesadilla

Are Valentine’s Day chocolates bearing you down?

Are you getting so many heart-shaped boxes of chocolates that you have to start throwing them out?

Sadly, these are not my problems (I would NEVER throw away chocolate), but if they’re yours, then, girl, have I got the recipe for you!

This recipe comes courtesy of Gabi Moskowitz, who was about to throw out her Lindt Chocolate Santa Claus when she remembered her brilliant recipe idea. I’ve taken the liberty of repurposing Gabi’s recipe for the steadily approaching V-Day and the never-ending boxes of truffles and chocolates that all you single ladies have the pleasure of getting.

Now without further ado, and with plenty of thanks to Gabi as well as all of the men in the world who buy their ladies chocolates, I bring you the decadent Dessert Quesadilla:

What you’ll need:

4 8-inch flour tortillas
4 oz. chocolate (truffles, chips, and Kisses work well)
4 oz. cream cheese
1 healthy pinch of cinammon
1 healthy pinch of salt
2 tbsp. unsalted butter, divided
2 tbsp. powdered sugar

What you do:

Spread each tortilla with an ounce of cream cheese. Sprinkle the chocolate pieces over half of the tortilla, on top of the cream cheese. Top with a dash each of salt and cinnamon and fold over to make a half-moon.

Heat 1/2 tablespoon of butter in a medium frying pan over medium heat and cook the quesadilla on both sides, until the chocolate is melted and the tortilla is golden-brown. Transfer to a plate or a warm (but not hot) oven until ready to serve. Continue cooking with remaining butter and quesadillas (using 1/2 tablespoon for each quesadilla).

Cut into wedges and serve warm, garnished with powdered sugar if desired. Serves 4.

Enjoy! - Lisa
